My favorite (for my first post):
Last Exile closing theme, "Over the Sky".

The Last Exile opening theme "Cloud Age Symphony" is pretty good too, but it's definitely an acquired taste. Both are by performed by "Dolce Triad".

Did this group do anything else, or did they exist just for Last Exile?

Kakashi's theme is amazing, but then again, so is Kakashi.

Howl's Moving Castle: Merry-Go-Round (A beautiful instrumental theme in Howl's Moving Castle which could only be created by the one and the only persno who created Howl's Moving Castle...confusing you yet?)
Tsubasa: Fai's theme (Fai is an ultra cool person and the theme did fit his strange nature)
Inuyasha: Rakuen (Do As Infinity FTW)
Loveless: Michiyuki (Represents the manga AND anime VERY well)
Full Metal Alchemist: Lost Heaven (The meaning itself is beautiful. A lost Heaven...true to most people out there)
Ruroni Kenshin: Heart of the Sword (The beat just gets me hyped up)
Detective Conan: (old school but...) Step by Step
Samurai Champloo: Shiki no Uta (FTW)
Cowboy Bebop: The Real Folk Blues (Beautiful work with Cowboy Bebop. Just like Shiki no Uta, he has successfully made jazz and pop into a whole new genre)
Gundum Seed (Destiny?): Anna ni Isho Datta you ni (The one with no words and the violin sounds much better than the ones with words )
Bleach: Thank You! (Again, Loving the whole jazzy FEELING)
DNAngel: True Light (the beginning is the best part of course...the melody of the piano took me over)
