Through The Night, the opening for Outlaw Star, is really awesome. So are the two ending themes. I also like pretty much all the songs from the three Dirty Pair Flash series.

I love most anime music, but these two I always watch/listen through when watching anime.
They aren't really "theme" songs, but I've always liked the ending of Inu Yasha, when the music plays during the credits. I'm a pretty big fan of Ayu, for the most part anyways.
