世の中にはたんとあるこったもの is a direct quotation. あるこった is a dialect of あることだ, thus, her mother says that all those things are common in the world.

Maybe they heard "tanuki" instead of "kitsune", she says. My question: why an order of tanuki soba would take longer than one of kitsune soba? Or is it related to the idea of the kitsune and the tanuki?
