Because they have strong market demand (customers want their products) and they have a "walled eco system" -- sort of a monopoly.
If people stopped buying Apple products so much they would become cheaper.
My iPhone12 was very expensive. BUT when I think back to my first home computer which cost me about $3000 around 1990 I feel much better about the price. It's amazing what this "phone" can do.

Are Iphones better than Mac?? It seems Iphones can be more expensive than Macs, and I wonder if they can even do the same things (by the way what is the differential of Ipads and Ipods nowadays, if any, when IPhones and Macs seem to do it)
