I suggest that you check out Joe Hisaishi (久石 譲, Hisaishi Jō) if you haven't. A lot of his music has piano solos. His music has been widely used in movies and anime (Ghibli films) as well.
Came here to recommend Hisaishi as well. A friend of mine has been learning his pieces and they are not only quite beautiful (and I imagine very gratifying to play), but they're also immediately recognizable
