I don't know too much about Japanese food, but from Japanese drama, I found the Jpanese hotpot is similar(in my opinion, identical) to the Korean.

So... can anyone give me some information about Japanese hotpot?

It's called "Nabe ryoori" 窶堙遺?堙冷?堙ｨ窶堙･窶堋､窶堙ｨﾂ in Japanese.
It is similar to Korean hot pot, but the soup is different.
There are many different kind of Nabe ryoori, though.
I love it.
It's easy to prepare. No cooking, really.
And tasty!
Nice in winter.

The best known Japanese one pot dish is probably sukiyaki which is usually cooked in a big donabe casserole dish right on the table in front of you, has beef, char broiled tofu, Japanese long onion and other vegetables. There are oden, yudoufu, shabu-shabu and mizutaki which are pretty common; kimuchi-nabe has become very popular in Japan as well.

The stock for most of the dishes is water flavored by konbu(kelp). The dipping sauces are used also.

For making soup, you always need bonito stock! This is a "must-have" in every Japanese kitchen!!
