Chiebijin Bizenomachi Tokubetsu Junmai Namazake (ちえびじん 備前雄町 特別純米酒 生酒)

Chiebijin Bizenōmachi Tokubetsu Junmai Namazake (ちえびじん 備前雄町 特別純米酒 生酒) is made of Bizen Omachi rice milled to 60%. The story goes that the recent 6th-generation master brewer was fascinated with the popularity of Ōmachi rice when sampling sake bars in Tokyo and elsewhere. The fans of Ōmachi rice were called "Omachists" (オマチスト). He swore to himself to create a Ōita sake based on Ōmachi. Using the luxurious Yamadanishiki for kōjimai and the untamed Bizenōmachi for kakemai creates the soft, beautiful quality of Chiebijin with the wild, powerful flavour of Omachi. This namazake comes in a cool aluminium-like label the brewers refer to as "Metachie" (メタチエ). Metachie celebrated its 10th anniversary in 2023.

Chiebijin Bizenōmachi Tokubetsu Junmai Namazake boasts a delightfully fruity aroma reminiscent of white peaches and green apples. It is complemented by a subtle presence of citric notes, particularly grapefruit, and a touch of green. A smooth and sweet entry leads to a robustly sweet palate that is well-balanced with the right level of acidity and enriched by a more pronounced peach taste. A gentle effervescence adds to the complexity. The blend of Yamadanishiki and Omachi rice varieties achieves a harmonious equilibrium, culminating in a brief and gentle finish.
