Aoshima Shuzō (青島酒造) is a small, family-run brewery based in Fujieda, Shizuoka Prefecture. It was founded in 1868 during the late Edo-to-early Meiji transition and remains under family ownership. The brewery is best known for its single core brand, Kikuyoi (喜久酔). Rather than maintaining a broad product line, Aoshima focuses on a limited range and refines it over time. Production is deliberately small-scale.

Its style is closely associated with what is often called the Shizuoka style (静岡流)—sake that tends to be restrained in aroma, with a clear structure and balance rather than overt richness. This approach was developed in Shizuoka in the late twentieth century, alongside improvements in yeast selection and temperature-controlled brewing.

A key figure in the brewery's modern direction is Aoshima Hideo (青島英夫), who returned to the family business in 1996 after working outside the industry. He shifted the brewery toward a more hands-on, artisanal model, focusing on careful control of each stage of production and a consistent house style. Water plays an important role. The brewery uses groundwater from its own well, noted for its stable mineral content, which supports steady fermentation and contributes to the sake's clean profile.

Today, Aoshima Shuzō remains relatively small and somewhat underrepresented outside Japan, despite a strong domestic reputation. Its sake is often described as precise and food-oriented, with an emphasis on balance rather than intensity. In practical terms, it is a brewery defined less by scale or marketing and more by consistency: one location, one main brand, and a narrow but carefully maintained range.

A fruity, refined nose with notes of green apple and pear. The entry is gentle and mild, leading into a full-bodied palate with a velvety texture. The mouthfeel remains balanced, with light sweetness, a soft rice character, and clear umami. Toward the end, a touch of sweetness becomes more noticeable. The finish is long, clean and unobtrusive. It goes well with food. The brewery recommends serving it warmed, though it also performs well chilled or at room temperature.
