Aoshima Kikuyoi Tokubetsu Junmai

Kikuyoi Tokubetsu Junmai is the brewery's core junmai within its limited Kikuyoi range. The sake is brewed using a combination of Yamadanishiki for kōji rice and Nihonbare for kakemai, both polished to around 60%.

A fruity, refined nose with notes of green apple and pear. The entry is gentle and mild, leading into a full-bodied palate with a velvety texture. The mouthfeel remains balanced, with light sweetness, a soft rice character, and clear umami. Toward the end, a touch of sweetness becomes more noticeable. The finish is long, clean and unobtrusive. It goes well with food. The brewery recommends serving it warmed, though it also performs well chilled or at room temperature.
