I don't think you can use 手伝う in this way. It's used for animate objects in my experience (i.e. people helping people).
I'd probably say: (私は)このビデオで日本語を勉強しました。
Where で means "helped" in the "by the means of" sense.

You can use 手助けになる or 役に立つ when an inanimate thing is the subject.
