How hard is it to get a student visa?

I am planning on going to a Japanese language school in the future for 6-12 months. Is there any reason my COE/visa could get rejected if all of the documents are alright? I heard they might reject you depending on your nationality. My country is a member of the European Union, not that rich but not the poorest either. Am I overthinking this?

If everything is in order you should be fine, especially if your host institution has a good reputation.
