My favorites are also Udon, Ramen and most of the other stuff you listed (I don't know all of the stuff you listed, so I can't say it for all).
Yudofu is possibly the single greatest gift the heavens have passed on to mortal man. But yudofu is a fickle mistress, she can turn on you if not handled properly...
I like yu-dofu too, and a lot of the other things mentioned. I had some good seafood-free okonomiyaki in Hiroshima (going to try a place called Hiroshima here in San Jose soon and see if they can do it too).
I'm allergic to shrimp and crab, which caused some hungry evenings at ryokan when we were in Japan. And although I like sashimi, I can't stand dried or smoked fish. Thank god for conbini.
I also like some of the so-called Western food, including pepperoncino spaghetti, katsukare, potato croquettes, and the various toasts.
Oh, and those potato burgers at Mosburger are yummy.
