来年は四月十一日まで四月十七日からかぞくと日本のきゅしゅへ行く事にします.

It might be more helpful if you told us what you want translated in English. It's hard to correct something if we don't know what you want it to say.

I think you got the basics all right, but there are some small errors that need to be modified.

来年の四月十一日から四月十七日までかぞく(家族)と 日本のきゅうしゅう(九州)へ行くことにしました。

~から~まで from ~ to ~
九州(きゅうしゅう)
事 is usually written in katakana when saying ~ことにする
します is present tense or general statement.
As you have already decided it should be past tense しました which means completion.
 
One more quick thing.

長崎県と大分県と佐賀県へ行きたい.

Is there a better way to say the above sentence? and also how do you include the word especially/specifically.?

eg. I specifically/especially want to visit the prefectures of Nagasaki, Oita and Saga (when I'm there.)

特に
so add it to the verb.
I cannot be 100%, so wait for someone better than me before you take this for definete:
長崎県と大分県と佐賀県へを特に行きたい.
I think you also forgot を in yours...
As for having a better way to say it, I haven't a clue.

No, you should not add を here... For 行きたい the particle へ showing direction (to Nagasaki and Ooita) is already used.

特に
長崎県と大分県と佐賀県へ行きたい.
You can add 特に before 行きたい but normally it can be put at the beginning of the sentence.

is this correct?

It should mean: On the first day I am going to ride the shinkansen from Osaka to Fukuoka.

初日に(は)、大阪から福岡まで新幹線で行きます。
 
The first day is 初日(しょにち) as Elizabeth indicated, or 一日目(いちにちめ).
