I think you got the basics all right, but there are some small errors that need to be modified.


来年の四月十一日から四月十七日までかぞく（家族）と 日本のきゅうしゅう（九州）へ行くことにしました。

～から～まで from ~ to ~
九州（きゅうしゅう）
事 is usually written in katakana when saying ～ことにする
します is present tense or general statement.
As you have already decided it should be past tense しました which means completion.

Is there a better way to say the above sentence? and also how do you include the word especially/specifically.?

I think you also forgot を in yours...
As for having a better way to say it, I haven't a clue.

No, you should not add を here... For 行きたい the particle へ showing direction （to Nagasaki and Ooita) is already used.

特に長崎県と大分県と佐賀県へ行きたい.
You can add 特に before 行きたい but normally it can be put at the beginning of the sentence.
