書き方鉛筆さんのおっしゃる通り、「により」も「によって」も使えますね。「によって」のほうが口語的かもしれません。
「この刀は俺自身の手で作られた。」としなかったのは、助詞「で」は方法・道具だけなく材料・原料の意味も持つからです。「手で作られた」とすると自分の手を原料にして刀を作ったように聞こえる可能性があるかなと。まあ実際はそんな誤解は起きないでしょうが。
「手」のような具体的なもの(メカニズム)を作ったから、「により」が使えないかもしれない例文は。。。
たとえば。。
漢和辞典により、知らない漢字を調べる。 ?
その老人たちはわずかの貯金により、生活している。 ?
それとも、ほかの理由で、ちょっと可笑しくなるでしょう?
その意見を耳にしたことはあります。どちらの文でも、「によって」が使えると思います。

As KakikataEmpits san mentioned, usually で would be used more commonly in such a context.

no you cant. It would mean a different thing. 一人しかいませんでした would mean: There a single person there.Wouldn't しか be more appropriate than も in that context?
