シェフ は イタリア人 の アントニオさんです。

Another beginner question here. Found this little sentence in a reading example in Genki 1. Now reading it, my first interpretation is "The chef is an Italian Antonio.", though obviously it's probably saying that the chef is an Italian named Antonio. So I guess my question is, would this be a typical way of introducing a person by their name? Whereas in a similar situation in English we include the "named" part?

I don't know how common it is to introduce people like that, but I've seen it quite often. [イタリア人 の アントニオさんです] The highlighted part is an attribute of アントニオさん. If you ever want to add an attribute to someone or something, it's common to use this の.
I think you heard a similar introduction used before in Genki;「友達のたけしさん」、if I remember correctly.
