Hi,

What is the meaning of いとうございます in the sentence 私はお二人の側にいとうございます? It's the いとう I'm confused by.

And __の端々, I've seen given as as "in each and every ___" or "in all of ___", is this correct?
 
If you first understand おはようcomes from はやい and ありがとう comes ありがたい then it will be easy to see that いとう is いたい (居たい).
 
As Mike-san explained, いとう is an u-euphonic change of いたく(居たく). See the following post.

This euphonic change was originally used in Kyoto , and still remains in Western Japanese dialects. This change doesn't occur in Kanto or Tohoku region, but since honorifics in Uptown Tokyo, which is the base of Standard Japanese, is strongly influenced by Kyoto/Kinki dialect, this u-euphonic change is used only when attached to ございます and 存じます (e.g. おいしゅう(=美味しく)ございます, うれしゅう(=うれしく)存じます).
