Addressing someone with a "romantic view" of something

hey guys,

Is there a way to address in japanese someone that, for example, believes every woman likes love letters, flowers and chocolate, or japanese people are always cold, serious, math experts and dislike human contact.

An overly romantized view of something.

I was thinking of 熱情的 but that sounds more like an enthusiast than romantic

You're just looking for a Japanese word for "romantic"?
Nine times out of ten you would probably just use the word ロマンチック.
 
English is not my first language but I would use words such as "stereotype" (ステレオタイプ), "generalization" (一般化, ippanka), "one-sided" (偏見的 henkenteki) to describe the examples the OP mentioned.

Kind of. But it was my mistake, I should've said "Romanticize" as in "romanticize an idea" /treat or perceive something in an idealized.

Not 100% sure if this answers your question, but there's a phrase in Japanese called ミーハー , which basically means a person who acts like a groupie or acts overly impressed with other people.

Another way of saying somebody gets overly impressed or overly affected by something is to say that they are ...によわい.

あのひとは、ラブレターとかによわいからね

She (he) is pretty vulnerable/susceptible/easily influenced by love letters and the like.

There are probably many more different ways to say this. I know you're looking for a one-word answer to your question, but I'm not sure there is one simple adjective (at least one in regular usage).
