I'm trying to learn how to say that I'm new to learning Japanese. Would this sentence structure work?
日本語は勉強が僕の新しい or nihongo wa benkyou ga boku no atarashii.
Or is there a more correct/better way to connect this sentence?

I'm afraid that neither of those works, grammatically. Actually 新しい is not the best for saying "new to" here.
The parts at the start are in brackets because in many contexts (e.g. if you have just introduced yourself), you don't need to say "I" with every sentence, so that part can be dropped.
