summer recipes

By the way, it is not Japanese cooking, but it is the dish which I want to eat in summer
REI MEN(Cold noodle)Korea cooking
This is cold and this is sour and is delicious.
In Japan, it is eaten well in Tohoku region.
It is eaten well in Miyagi
It is not eaten very much in Kyushu .

That picture makes it look much nicer than I have seen it :D That looks edible!
I am always scared I will choke on the cold noodles, so I cut it into little pieces with the scissors.

I love Yaki Soba! Yummy this is one of my favourite things in the world... and I forgot all about it! Wow that sure makes my mouth water...

"窶氾「窶堋オ窶堙。窶堙板(窶嘔窶壺?ヲ窶壺?ー窶壺?懌?壺┐窶堋≫?壺?壺?壺?「ツ)ツ"

Cooking is simple,
1.I soak slice meat of a pig in hot water
2.I soak it in iced water.
3.I wipe off water.
4.It is dished up with a salad.
5.Sesame Tare or lemon-soy sauce is covered over it.

My curry is homemade and is too watery for my taste.
Homemade curry is the best! I used to have the same problem, and I just started to make the one I actually like after so many failures. It's never as good as the one I had at my favorite Indian restaurant, though.

Tomato paste is an excellent thickening substance in curry, it also makes the flavor richer. Coconut milk or plain, unsweetened yogurt are often used in curry, but I like using the tomatos better.

"冷やし烏龍茶漬け(HIYASHI-oolong CYAZUKE)"
It cools it and is soaked in oolong tea
That looks interesting and very Japanese way of creation.
I love iced oolong tea in the summer. 👍 But not over the rice... :p

Call me unoriginal...but I think eating yogurt while using pocky sticks for the spoon is a damn good summer food. :-)

Mmmm - I LOVE hiyashi chuka! I'm actually gonna have it tonight....it's really such a great summer dish.
It was Yoshio Yotsukura who invented hiyashi-chuka in 1937 at Ryutei in Sendai.
They call it liテ。ngbテ?nmiテ?n in Chinese.

Oh, How I love edamame!
Records tell that Japanese were eating boiled vegetable soy as early as the 12th century. It is said that edamame got popular among people in late 17th century.

Summer foods

Oooh! All these foods look delicious, I better start trying them! It's really hot here, and the watermelon bust thing looks kinda good. (I looked it up.)

😌 No it's not relief, it's me sweating to death here!

Hiya Somen

The typical food of summer is "Somen"
recipes
During summer, cold somen is one of the best dishes around.🙂 However, I don't like the recipe shown by Bob and Angie. I guess it's Osaka style? Here's my recipe, it's Tokyo style and omits the sesame seeds but adds nori and ice cubes.
1 package somen
diluted tsuyu (buy the bottled stuff if you can or make your own as per Google)
1/4 cup finely chopped green onions
10-12 pieces ajitsuke nori (cut into fine strips)
1/3 cup grated ginger root
Cookd somen noodles in 2 quarts boiling water for 3 minutes or as directed on package. Drain, rinse with cold water and drain. Chill and serve with 4-5 ice cubes placed on top of noodles.
Each guest should have a small bowl with the diluted tsuyu. The condiments: grated ginger, nori, chopped onion, should be served separately and added to the tsuyu according to that persons taste. I recommend adding everything.
Take the cold noodles and dip into sauce then slurp with Gusto! :p
It's soo good.

BTW, another great summer dish is barbecued corn (tomorokoshi). You can buy this at any matsuri duing the summer. It's great with a cold beer.
FINALLY, although it's not a dish, I think it should be mentioned...hakutou!! White peaches...sooo sweet and unavailable in the States to the best of my knowledge.

The dessert of summer!!
"カキ氷(kaki-gori)"Oyster ice
Sweet over which shaved ice and syrup was covered
A mark is this flag.

宇治金時 uji-kintoki
The topping of the azuki bean is carried out covering powdered-green-tea syrup over shaved ice.

It's called shaved ice in Hawaii and snow cone in Cali and other parts of the U.S. A special treat in Hawaii is shaved ice with azuki beans at the bottom covered with vanilla ice cream then covered with shaved ice with the flavor of your choice.

Here's one Hawaiian guy enjoying his kakigori. obama+shaved+ice.jpg (image)

According to one report, shaved ice was introduced into the States by a nikkeijin who bought a kakigori machine from Japan and started a business on Oahu (Hawaii). He did very well with this new dessert and it spread to the "mainland".

We have an electric Kakigori-machine at home! You just open up the top, drop some ice cubes in, then turn it on and voila! You have shaved ice!!

I like to eat mine with some strawberry syrup and sweetened condensed milk. It is also great with Calpis, straight from the bottle.

Unagi

What is eaten in summer.
"うなぎの蒲焼(Kabayaki of an eel.)"
I get completely exhausted in the summer and eat for prevention
Vitamins b1 is included in an eel abundantly

I've never been a fan of unagi; I think it's texture is too soft.
However, this summer I vow to try learn how to like it.

As for kabayaki, I'll stick with kabayaki sanma (with chazuke--it's hard to beat). What I want to try is shirayaki unag, and someone told me there is a famous shirayaki unagi restaurant in Yokohama. While Yokohama is not that far away, I wonder if Tokyo has a good shirayaki shop? If anyone knows of one, please let me know.

HIyashi Chuka

I think this might be a Chinese dish but the Japanese have adopted it wholeheartedly. This stuff is so good in summer! 😄 And Cooking with Dog shows how to make it.

Doesn't look hard to make, but I think I'll just get mine at the 7-11 konbini. Soo good.

After seeing so many people recommend Hiyashi Chuka, I decided to make it myself tonight and it was yummy! So thanks! :D
