If you wouldn't mind, would the native Japanese speakers give their interpretation of these sentences, please? If anyone else wants to, though, I don't mind. In fact, it would be interesting to compare. This is how they were found, no extra context given. This is basically a fill-in-the-blanks exercise, just so you know. どうぞよろしくお願いします。

「 辞めようか。」妻と子供のことを考える。 .....
妻に話すと、簡単に同意してくれた。

Er, where's the blank? And sure there was a 。right after 考える ? I would have expected something more like ...

I don't really understand what you want, but I'll just give it a try.

"Should I quit [my job]?" The thought of my wife and children crossed my mind.

My interpretation of this one is basically the same as Pooru-san's.
