Hatchō miso (八丁味噌) is receiving international attention and recognition:

Seven chefs involved in developing menus for athletes competing at the Asian Games, which open in September, visited a long-established Hatchō miso producer in Okazaki on 22 June as organisers seek to showcase Aichi's food culture through traditional fermented seasonings such as miso and soy sauce.



The chefs, from countries including the United States, France and Australia, have extensive experience preparing meals for athletes and officials at major international sporting events, including the Olympic Games and the FIFA World Cup. During their visit to Kakukyu Hatchō Miso, company representative Kenji Nomura explained the traditional production process. He noted that Hatchō miso contains relatively little moisture, making it a particularly firm variety of miso, yet it is still packed by hand using traditional methods.
