Japanese Udon Recipe.

So I am trying to find a recipe for this Udon an exchange student once made for me, I lost contact with them and I can't find it anywhere online!

I know they made the udon, and drained it (so no soup), but they had really good spices on it, it was spicy, and I know they also put egg whites in it..and that was it, but it was amazingly delicous!

I just want to know what spices I should pick up, or if anyone knows of good spicy udon recipes that don't have meat or many vegetable mixed in (I like main course simple with veg on side) which is exactly how they made it and I couldn't get recipe..

Hard to tell from your description, but it sounds like the kinds of recipe a typical Sanuki Udon-ya would make way back. Do you remember anything about the spice? Was is red and kind of peppery like Shichimi tōgarashi (Japanese: 七味唐辛子, "seven flavor chili pepper")? Or something else?

Udon is actually very simple but can be garnished almost in infinite varieties. I've had some that was just udon, soy sauce, and chives.
