japanese bakery!

I don't mean Japanese themed bakery's, but any bakery's in Japan! Can either be medium corps. or small town shops, but I'd love to learn about them!
I'd love to learn more about the possibility of owning one in Japan! Any information about owning a small business/shop in Japan, and what I should be looking into would help!

Personally, I don't care for most 'Japanese' bakeries. They tend to put stuff in way too much of the bread. Cream, meat, something. It's really hard to buy just good bread. I'd love a kaiser roll to take home and make a sandwich with. But that is not the standard here.

If you are into baking, you'll have to adjust your sensibilities to match the market. I think authentic Western style bakeries might be able to survive in a really big market, but in general, that's just not what the people want. As much as knowing business laws and practices in Japan is important, you should know the market too. I can't help but think a true baker would be let down in Japan.

I know what you mean. I find that the stuff sold in Japanese bakeries are full of "fluff". I don't know how to say it correctly but yeah, and toooooo sweet. Cream this, cream that. And also, they are so pretty. They are almost like art work and it's a shame to eat them. Oh well.
