I wish to begin to understand 「~出す」 and 「~始める」

I've heard two words appended to verbs to indicate the beginning of said action: 「出す」 and 「始める」. But I'm not sure what the difference in usage and meaning is. Could I receive some help in understanding this? Many thanks.
 
From what I've read about them, the only difference is that 〜だす implies a more sudden and abrupt start than does はじめる.

帰っていた途中、思わず走り始めた。
信号で選手はみんな走り出した。

I'll admit that those sentences are perhaps not the most natural, but I hope it gets the message across. Also, I'd like to know if there are any more differences.

帰る途中、思わず走り出した 。I think is better though since I've never heard
走り始めた。😅 and can imagine it may mean nothing more than simply starting to run whereas dashita definitely implies a sense of speed, purpose and direction.

I hope it comes off mostly OK, anyway. :p
