Help with kanji characters for artwork

Hello, I am a metal artist working on some pieces for some koi enthusiasts. I have researched the characters for koi and from what I understand the common one to use for this purpose is actually "brocaded carp or embroidered carp" rather than just plain carp. I have two questions.
1. Is the common translation for koi (as in the type raised and shown in the US) correct as in my first attached image.

2. I have to stencil letters when cutting them out in order for the steel not to drop out in the cutout parts as I have done in the second black image. I know how to do this with english characters but I need to know if I have altered the characters and if they are readable.
