I guess that sushi reataurants in Japan are mostly regarded as quite relaxed places where you can enjoy lively atmosphere. I find it so funny to visit sushi reasaurants in the west where the guests behave as if it was some kind of zen ritual.

I have only one experience with a sushi restaurant in Japan. It was a very pleasant experience, one of those gigs where you got the moving belt with sushi plates on it. It wasn't loud at all, but we were there around noon on a weekday also. Speaking without any experience I guess it just depends on where you go and what time of day/day of the week.
