Kaiun Aizan Junmai Muroka Namagenshu (開運 愛山 純米 無濾過生原酒) is made of Aizan rice from Hyōgo Prefecture milled to 55% and Shizuoka yeast. This winter-only namazake retains the essence of Aizan, a rare rice that is challenging to handle, delivering a captivating aroma that hints at the sweetness to come. It's a harmonious blend of gentle sweetness and acidity on the palate, creating a comforting and warming experience. Despite its soft profile, the sake bursts with the lively freshness characteristic of unfiltered sake. This is a must-try for sake enthusiasts, a seasonal delight limited to one tank that vanishes before summer.
