Homare Junmai Ginjō Yume no Kaori (ほまれ酒造 純米吟醸 夢の香)

Homare Junmai Ginjō Yume no Kaori (ほまれ酒造 純米吟醸 夢の香) is brewed entirely from Yume no Ka rice grown in Aizu and made with spring water drawn from 100 metres underground in Kitakata. After pressing, the sake is immediately bottled and stored unpasteurised for twenty days to allow the glucose level to rise naturally before being pasteurised in the bottle and stored at –5°C. The calligraphy on the label was written by Urayasu-based artist Kaishu Ikeda (池田薫秀).

The sake offers a clean, pear-like fruit aroma with a sense of clarity and freshness. On the palate, it carries well-rounded sweetness and savoury depth, balanced by a faint bitterness and a dry edge that brings focus and structure. The finish is crisp, and the aftertaste lingers gently, leaving a clear and harmonious impression. Best served between 5 and 10°C.

Homare Brewery is located in Kitakata, Fukushima Prefecture, just north of Aizuwakamatsu . It was founded by Karahashi Kōsaku (唐橋幸作) in 1918, a rice wholesaler and miso and kōji manufacturer, who took over the brewery, renaming it Kano Sake Brewery (加納酒造株式会社) and, later, Homare Sake Brewery (ほまれ酒造株式会社).

The representative brand name 'Aizu Homare' was named after the Aizu region and 'Homare' in hiragana because it was easy to read and remember. At the time, using hiragana for sake brands was quite rare. The typeface of 'Aizu Homare' was written by the modern calligrapher Tenrai Hidai, born in Nagano Prefecture.
