can you tell me what sort of japanese pastry is in this anime "Spirited Away" by Miyazaki?

Looks like manjuu to me. It seems to be called mantou in English (from the Chinese).

If it is something conventional, I'd say it's "anpan," a bread with sweet bean filling.
But, the story being a fantasy, it can be anything.

I second that opinion. I would say it's more likely than not anpan.

I was at the asian market the other day and saw some of these. I think it is anpan, but I can't remember if that's what the package said.
