This is two soldiers talking, they are both called へいし in the game so I don't quite know who is talking and when. I assume each line alternates between them.

おい かぜのたにの やつらは ちゃんと はたらいているか？
ああ さむさにつよいと きくだけおって もんくもいわず はたらいているぜ。
もっとも いわずないようにしてるけどな。ヒヒヒヒ・・・
やつらには もっとしっかりと はたらいて もらわないとな。

Does さむさにつよいと mean "if you/he are resistant to the cold"?
きくだけおって, I assume おって is 追っ手, but overall I really don't know how to translate this little phrase.

The second and the third line are said by the same soldier.
と is for quotation in さむさにつよいと.
だけあって is a set phrase.

I don't quite understand what にしてる means after いわせないよう. Is he saying that he did something to them to make them unable to speak?

Vようにする means along the lines to "make it so that (verb)". Since he's referencing the earlier "もんくもいわず", the speaker means not necessarily that he's stopping them talking altogether, but that he's ensured (through whatever method - threats, magic, overwork) not that they just don't complain, but they can't.

They're working without complaint, as might be expected from people who can handle the cold, or it's the work keeping them quiet, hahaha.
A: やつらには もっとしっかりと はたらいて もらわないとな。
They must work even harder.

I had trouble translating that bolded part, even though I feel like I know what it means.

The underlined part is a bit of a jumble to me, I can't see where one word ends and the other begins. I think it may be 四天王の一人だ。

どれだけ～か is a structure to express the degree of something "how~".

This one is tricky.

You would know the structure for an embedded question "interrogatory + か".
e.g.
彼がいつ来るか知らない
I don't know when he will come.
なぜ怒っているか教えてくれ。
Please tell me why you are angry.

どれだけ～か is just one of them. Nouns that express a state(mostly the stem of na-adjectives such like きれい, ばか or 困難) can be used after どれだけ in this structure. You can think どれだけみのほどしらずか as どれだけ（自分の）身の程を知らないか.
I don't know the context exactly, but the speaker might be talking about the opponent's ability.

This is the conversation before the beginning of a boss fight, the man talking is the boss. I walk up to him and he begins talking. That's all there really is for context on this one.

I'll study this some more, and hopefully I can come up with something.

Is this right: みのほどしらず = "without social status"?

I think he's saying something along the lines of "I'll show you your social position" or "I'll put you in your place".

私と戦うとは、きさまがどれだけ身の程知らずか思い知らせてやるわ！ makes more sense? The boss is talking about your ability/skill to fight, as I wrote; something like "I'll show you how overweening/overreaching you are (to fight with me)".

This ていど is 程度 or 帝土?

And かった is paste tense 勝つ?

このていどで = by means of this
おれさまに by/to me
かったと おもうなよ! I think I will win

I'm trying to put those together into a sentence and I'm failing, are each of those sections correct?

程度 means "degree/extent". I think he is talking about the damage he got.
勝った is the past tense (it's more likely present perfect here, though).
The subject of おもう is "you".
You missed な; a particle for negative imperative.

Oh yes I remember now, I defeated him at this point, so yes he may be refering to the damage recieved.

このていどで おれさまに かったと おもうなよ!
Don't think that this will defeat me.
