えきのまえ( )イーさん( )会いました。

Am I right in thinking the first particle is either に or で? I am stumped on the second particle. I always thought に would apply when meeting someone. I would appreciate a nod in the right direction. Thanks. :)

I keep second guessing myself.
 
No need to second guess about the relationship between に and 会う, you're in the right direction :D.

But, what do you know about で?
 
From what I have studied the particle で represents a place of action and defines means of transport. It also represents use of an object like a pencil or chopsticks and such.

I think I have the first two particles right. The last bracket I think is "" - and am I correct in thinking that there isn't a particle after "いつも"?

さとうさんにかります = borrow from Satou
さとうさんのをかります= borrow Satou's

I have the option of two particles here - either で or を. I am thinking を is the correct particle? The only reason I am having trouble with this one is that both particles seem applicable.

休む can mean both "to take a rest/break" and "to be absent from/not to attend". で indicates the location where the subject takes a rest in the former meaning, and を is the object(school, work, meeting, etc.) the subject is absent from/doesn't attend in the latter meaning.
e.g.
散歩の途中、公園休んだ。
さんぽのとちゅう、こうえんでやすんだ。
I took a rest in a park while I was having a walk.

祖父の葬儀で学校休んだ。
そふのそうぎでがっこうをやすんだ.
I was absent from school because of my grandfather's funeral.

As for your question, the answer that is supposed to be correct is を, as you guessed, but で also can be correct in a very specific context, for instance, you are in your office now, you have something to do tonight and you need to take a rest for preparing it, but you live far away from your office, so you report your boss you'll take a rest in the office until the event instead of returning home.

I think I have the first particle right - and I believe the second is 'what' -but would I use 'なん' or 'なに'? if I were to have a guess, I would say 'なん'.

I don't think どう is a particle, but your answer is correct.

The second spot is asking for what sort of food there was. Think carefully. Have you learned some words for "this kind", "that kind", "what kind"?

No, I haven't had a lesson in that. Although I have used どんな before when I started learning adjectives.

を is the correct answer. It indicates the departure point and location of transfer, respectively.
高校を出る(to graduate from high school) / 町を離れる (to leave a town)
道を歩く (to walk on a road) / 空を飛ぶ (to fly in the sky)

部屋に出る is also valid, but 出る means "to reach/get to" or "to appear" in a specific context.
e.g.
廊下を右に曲がると部屋に出た。
I turned right on a passage and got to a room.

ゴキブリが部屋に出た。
A cockroach appeared in my room.
