I have looked up the dictionary but I couldn't find the 反対語 for 生（raw）

This fish is raw = この魚は生です。

So how do I say this fish is cooked????

I would use 火を通[とお]してある / 火が通[とお]っている. This expression can be used for any case of cooked fish such like roasted, boiled or fried. 調理済み[ちょうりずみ] is another option.
