Not really related to (edible) Japanese food but this is simply amazing: watch how 'display lettuce' used in restaurant windows is hand-made in Gujō Hachiman in Gifu Prefecture.

When I first arrived in Japan , I would drag someone out and point to what I wanted. The display food always looked better than the real thing served. The detail and colors were very real. Almost every restaurant back then had the display in the front.
