The other day, a schoolmate kindly offered to help me carry some heavy-looking suitcases that I was lugging. I declined but thanked him. In the following days, I met up with him and, in Japanese, wanted to thank him again, specifically, for offering to help. But when I couldn't figure out how to say it. Thus, I turn to those more knowledgeable than me yet again.

How would I express "Thank you for offering to carry my bags the other day" in Japanese? I have a feeling that it will be something really simple, but nothing much is coming to mind. Here's a guess, though: この間、荷物を運ぶのを｛動詞｝してくれてありがとうね。

よろしくお願いします！

just off the top of my head, I would maybe say 。。。運ぼうとしてくれて。。。, or 手伝おうとして, but I'm not sure if this is the most appropriate way to say this.

Yeah, that was about what I came up with too, but then figured I'd leave it to someone else. I think I may have had a clumsier way to put it, too, but I've forgotten what it was (probably for the best).

I think この間、荷物を運びましょう（持ちましよう）と言ってくれてありがとうごあじます。
is probably OK. The only worry would be if you put it too strangely it will come out like his offer of help was well intended but it was more of a hindrance and that is the reason it was refused....

I think Elizabeth san's expression is good:
この間は荷物を持ちましょうと言ってくれてありがとう（ございます）。
It is also possible to say
荷物を運ぶのを手伝おうと言ってくれてありがとう。
（I guess 運びよう is meant to be 運びましょう）

While all your suggestions are very good, it all sounds very specific doesn't it..? "Thanks for saying that you wanted to carry my bags the other day".. I would take a different approach, which is maybe a bit more informal but sincere nonetheless:

レオン：この前はありがとうね。
A君：え？何の話ですか？
レオン：荷物運ぶの手伝おうと（してくれて）
To which he will most probably reply:
A君：いえいえ！かくかくしかじか。

But that's just me.

As Leonmarino already said, この前はどうも or この前はすみません.

If he seems confused, clarify with スーツケースの時.

You're どうもing and すみませんing for the kindness/consideration shown, regardless of whether the act took place or not. In fact, it is common to say such things whether anything that we might think would even remotely warrant it took place or not; just grease on the social skids.
