I would like the recipes and steps to make them for the following food from you guys personally:

I think you're gonna need to Google a lot of that. Forgive me but it looks a little bit like you haven't done a lot of research yourself so far. Sashimi doesn't really have a "recipe", unless you count thinly slicing pieces of fish. The art is in the the way it's presented and that's down to you. Other foods like Okonomiyaki on the other hand have dozens of different variations and recipes (some regional).

You are asking for a real lot of information -- which would look like a big job requiring a lot of work and time to write down all the recipes you want. I'm sure there are more than a few cook books off line or on line. For example try Google "japanese cooking," "japanese cook book" or "japanese recipes."

Here's about 67,000 Japanese recipe links I got from googling "Japanese recipes"; just browse through and I'm sure one of them would answer most of your questions.

I would also like to suggest trying the "search" functon of this forum up there in the menu bar 2nd from top. That way you get members' responses from previous questions like yours, and they would be personal replies for the person who asked the question. If you have more questions, try finding something on google, or if that confuses you, post them in the thread that is related or start a new one BUT with a specific question.

I agree. Some of the dishes are very simple to make, and if you google for a recipe for e.g. sashimi and miso soup...it is very simple to make. The hardest thing is finding the right ingrediences: fresh fish, bonito fish stock, and of course miso paste....

In fact this section also has a lot of recipes, e.g. okonomiyaki, oyakodon, tonkatsu etc...

Hey there !! If you have no luck with the google probe, let me know and I can help you with a few of them, but it will be simple in directions, and perhaps not as good as it could be done here because of some 'enviornmental' aspects, and ingredient aspects. Do you have an Oriental food store in your area? Can you get the short-grain rice there?

hahha, or you could just go out and buy it out of a box... I rather like the boxed Okonomiyaki mix, just add my own ingredients and away we go! Lots of mayo and okonomiyaki sauce!
Yaki Soba is very easy to make. You can even buy Yaki Soba sauce, or just use some of your okonomiyaki sauce. Usually if you buy the half cooked noodles, then they have a little sachet of sauce inside, and if you have eaten it before then you would know what other ingredients to put in, such as your pork and cabbage etc...
A lot of those dishes that you wanted recipes for are actually easy enough to work out, and alot of japanese dishes use a similar if not the same sauces and seasonings. So next time you are eating these dishes, try to think about what is similar to another dish, the added ingredients, and obviously you can tell the difference between raw, cooked, boiled, stewed, and fried. Then you shouldn't be able to go wrong.
Also there are a multitude of recipe books available, and the majority of those dishes would be easy enough to find all of them in one or two. Thats if you dont like the thought of looking elsewhere online.

I don't know what you want to use the recipes for, for your homework on Japanese culture or for your cooking?
I found some recipes you mentioned above difficult to cook at home, such as Unagi. Many like to eat it, but few cook it at home. Following sites give you recipes in English.

When you're studying Nihongo as well, following site, 3min cooking would help you much for your listening comprehension as well as your cooking skill. I don't think the program is as interesting as programs like Naked Chef or Iron Chef, however I think it is a very practical program with announcers pronouncing Nihongo clearly.
Actually I check it out everyday, and my favorite cooking lecturer is a Turkish woman right now. Her Nihongo sounds cute to me, and the Turkish food is also interesting.

I don't think you should start from authentic J recipes, but I believe easy would-be Japanese or hybrid recipes make you keep your curiosity.

Wasabi Mayo--- Mix wasabi with mayo. Eat or dip salad with wasabi mayo sauce. Good for the grilled fish as well. A bit soy sauce enhances the sauce.

Miso Mayo--- Same as the wasabi mayo
Soy sauce butter sauce for steak--- Place butter as much as you like and spread 1 to 2 tsp soy sauce on steak
