In a sentence ・・・ナマかそれに近い形で食べる・・・ 形 shouldn't be read as かたち should it? If not かたち then what? けい?かた?なり?

かたち

Grammatically, the sentence pretty much calls for a 訓読み there.

I see. That's how i read it instinctively. But looked up it's other readings just in case. While i was familiar with かた and けい readings, mostly in compound words, kango and as a suffix. なり seemed like another plausible 訓読み in that case.

なり is rarely written in kanji.
かた is basically for "appearance", but かたち is used as "state" there, as you wrote, that's why it's read かたち.
