Personally, I don't care for most 'Japanese' bakeries. They tend to put stuff in way too much of the bread. Cream, meat, something. It's really hard to buy just good bread. I'd love a kaiser roll to take home and make a sandwich with. But that is not the standard here.
If you are into baking, you'll have to adjust your sensibilities to match the market. I think authentic Western style bakeries might be able to survive in a really big market, but in general, that's just not what the people want. As much as knowing business laws and practices in Japan is important, you should know the market too. I can't help but think a true baker would be let down in Japan.
