Is there a difference in the shape of these three bowls?
Is there a difference in the volume (capacity) of these bowls, typically speaking? (miso smallest, then donburi (medium) and ramen (highest capacity) ?

Yes and yes (you have the correct order of size).
Typically bowls for miso or donburi will be made of lacquered wood. Ramen bowls are almost invariably made of porcelain/china (or plastic).

Almost all donburi are made of porcelain. The same goes to ramen donburi since ramen donburi belongs to donburi. There are so many types of donburi and ramen donburi, so it can't be said which is larger, but the body of ramen donburi is often linearly, unlike usual donburi.

Yes, lacquered wood donburi indeed exists, but it's rare compering to lacquered wood owan/miso soup bowl.
 
The difference of the bowl,The bowl with a cover is for beef bowls.
The bowl without the cover is for ramen.
Because a cover is necessary for the last process of the dish.
