Difference between ので and せいか

Recently I have tried to understand following sentence:

きが ゆるんだ せいか くうふくを おぼえた 幸子さん、 ふと、
しゅうとめが ちかくの こうきゅう スーパーで かったという
ドーナツの ふくろに めが とまった。

Because Sachiko-san became relaxed she felt hunger, and suddenly Sachiko-san
noticed the bag of doughnuts that monther-in-law, as she said, had bought at high class supermarket nearby

If possible, please kindly, explain if I replace せかい with ので, would it change the overall meaning. Maybe both せいか and ので could express "because" in this sentence, but I am not sure.

せいか is せい (due to/because of) + か which implies wondering/doubt.
While the clause with ので is simply followed by the result, せいか implies there's assumption of the reason by the speaker.

疲れたせいか家に帰りたくなった she felt like to go home perhaps/maybe/probably because she got tired (assumed reason/background w/o 100% confidence)
疲れたからだろう、家に帰りたくなった (same as above but much more confidence in one's assumption)
疲れたせいで家に帰りたくなった she felt like to because she got tired (reason)
疲れたので she got tired, and felt like to go home. (certain fact/event + result)

I am little bit unclear about the reason for だろう usage. If I elide だろう, would it change the meaning of the overall sentence.

Like undrentide-san explained upthread, the reason clause of this sentence translates as "(high possibility uncertain) probably/most likely because." By 疲れたから you take away the chance element and make the grounds for leaving absolutely clear.

疲れたから is no problem if you tack んだろう etc onto the end as a supposed explanation or reason. 家に帰りたくなった(んだろう)。
