Hi. Does AIが可能であるとの試算を出した mean "AI has calculated that the three options are possible"?
Is the と of the underlined part a quotative と? And can we omit the の between と and 試算, just like と噂 in this thread?

Yes, your interpretation appears to be correct, and yes, if you dropped the の it would just change it from a noun phrase to an adverbial usage.
Perhaps the noun phrase formation is more common given the context here (it's referring back to a specific 試算 that's already been explained in detail), but it would not be strictly ungrammatical the other way.
