匂いをする vs 匂いがする

Hi. Why is においをして used instead of においがして in this context? I've seen the latter 匂いがする more often.

匂いをする sounds a bit awkward to me. I believe 特徴的な匂いをさせてらっしゃいます is more suitable there. 匂いをさせる is more active than 匂いがする, similar to 匂いを出す.
 
Thank you. So does 匂いがしてらっしゃいます also work in the context? Do the three (匂いをしている、匂いをさせている、匂いがしている) differ in meaning?

To me, 匂いをしている、匂いをさせている describe a trait of having some smell while 匂いがしている means the smell is actually striking your sensation. So 匂いがしている doesn't work in the context.

I don't think so. 匂いをさせている can also be "the smell is actually striking your sensation." Plus, 匂いがしています is a present state, and it can mean いつも匂いがしています, i.e., a trait as a result. Thus, 匂いがしています works fine there. 匂いがします would be better, though.
