全ては過ぎ行く時の夢 I am sort of confused on how to translate this. "It's a dream that shows everything passes in time?"

and I have a question on this one as well
愛し過ぎるのは もうやめたのさ: "I stopped what I loved too much?" Why do we add のさ at the end of sentences?

"[A] dream of when everything will pass/has passed/etc." Notice that there is no verb at the end, it's left off, so we have to make assumptions. 時 here means 'when' and the whole sentence's present or past tense relies on the verb at the end, that you are missing. Without the context, it's hard to say.

愛し過ぎるのは もうやめたのさ

" have already stopped loving too much / overly loving." のさ is short for のことさ. のこと basically just states a reason, and it's usually not translated into English. さ is the same as よ, but more masculine.

全て is NOT the subject of 過ぎ行く. は can't indicate the subject in a modifying clause. The core is 全ては夢, and it can be considered as a sentence the copula is omitted from.

Everything is a dream in the passing time.


のさ and のことさ are differnt. This の is from the explanatry の.
