1: 私は1しゅうかんに1回にほんごをべんきょうします。
2: 私は1かげつに1回CDをかいます。
3: 私は1年に1回 ......

For the last sentence, I would like to add about going on holiday (once a year). How would I translate that? Do I just use やすみます? I'd appreciate a point in the right direction. Thanks JREF,
 
旅行する could work (e.g. if you mean a holiday away from home - you presumably have time off more than once a year).

やすむ is more generally taking a break - it can be used if someone is off sick, for example.
 
For learning purposes you might want to spell out the "1"s. Then it's clear if you know how it conjugates. For example: 1しゅうかん=いっしゅうかん (not いちしゅうかん or いしゅうかん). Japanese themselves typically don't insert "1" into their sentences in this fashion.

やすみます is valid but as nekojita says, りょうこうする gets the meaning across better. If you're talking about taking paid vacation time from work (but not a trip) you can say ゆうきゅうをとります。
