Hi. Could you please explain the structure verb+とです? I'm at a loss as to its function and meaning.

As you would already know, ね can be used also at the end of a clause/phrase, not only at the end of a sentence.
e.g.
年配の研究者の方々とね、酒宴でね、ご一緒するとね、

ですね is the polite version of it.
