We tried Batch 13 in February and now followed up with Batch 48. A fruity aroma greets the nose, accompanied by a subtle acidity and the delightful scent of pear compote. The flavour opens rich and deep, though with a brighter character than is typical for Tamagawa brews. Effervescent and full-bodied, it features a velvety mouthfeel, with rice-derived sweetness balanced by sharp acidity, pleasant umami, and a faint hint of bitterness. The finish is long and crisp, leaving a mild bitter tingle. Freshly pressed, this sake retains a natural fizziness that, paired with the untamed character of Omachi rice, lends it a lively, zesty quality, making it truly distinctive.
