Takashimizu Junmai Daiginjō (高清水 純米大吟醸) is made of Akita Komachi, Akita's best rice for sake brewing, polished to 45% using state-of-the-art rice milling machines equipped with diamond rolls and brewed in the Akita-style cold brewing process. The moderate acidity and refined umami flavour spread softly in the mouth. This Junmai Daiginjo stands out for its gorgeous, full-bodied aroma.
This affordable Junmai Daiginjō is best enjoyed at room temperature or chilled with Japanese or light Western food.

"Takashimizu" was chosen from 5,037 submissions and means "high spring water". In Akita City, "Takashimizu Hill" is famous for its spring water. According to legend, the sacred spring started gushing in the middle of the 7th century; the area is also known as the location of Akita Castle, one of the biggest citadels in the extreme north of Japan.
