Takashimizu Junmai Daiginjō is made of Akita Komachi, Akita's best rice for sake brewing, polished to 45% using state-of-the-art rice milling machines equipped with diamond rolls and brewed in the Akita-style cold brewing process.

There is not much to add to last year's review. What's new this year is the label design. Being a "cospara" Junmai Daiginjo (cospara stands for "cost performance"), it struck us as what is called "usui" in Japanese, thin and a bit light. Still, it is pleasant to drink, especially with food.

This sake has a complex and fruity aroma that reminds you of melon, grape, strawberry, and more. It also has a floral touch. The body is medium, with a creamy and silky feeling in your mouth; slightly viscous. The flavour is fruity and fresh, with a pleasant contrast of acidity and dryness. The aftertaste is bitter and refreshing.
