Kamihei Brewery is in Tōno, Iwate, a town known for its mysterious folk stories. In 2016, master brewer Sasaki Katsunori started making sake. During that time, he won the Kura Master Platinum Award, the US Sake Tasting Competition Gold Award, and the IWC International Wine Challenge Silver Award. Finally, in 2020, he won an award at the National New Sake Tasting Competition and the IWC International Wine Challenge Trophy Award. The "Tōno Komachi Series" is sake made using ingredients from Iwate Prefecture.

Kamihei Brewery began producing sake rice in 2020 in collaboration with contracted farmers, aiming to make authentic Tōno sake by taking advantage of the region's naturally rich climate. Since 2022, Kamihei has been cultivating "Yui no Ka", "Miyamanishiki", "Ginginga", and "Kame no O" rice varieties.

We tried Tono's Tokubetsu Junmai in December and had another bottle stored for about three months. It was too soon to call it "aged," but we noted some subtle differences: it was slightly matured, had more profound and pronounced aromata, and had a less lactic and spicier character. The fragrance of narazuke pickles and dried fruits was present. While still relatively light-bodied and of refreshing acidity, it is more pungent, profound, and earthy. We liked it much better than the first time. Overall, an elegant, tasty sake, splendid solo or with food.

Slight bitterness and umami provide complexity, while the rice flavour is clean and pleasant. The finish is long and pleasantly sour. This sake pairs well with various Japanese cuisine, particularly dishes with subtle flavours.
