This sake, crafted by Kokonoesaika Brewery in Wakayama Prefecture, the birthplace of sushi, is a harmonious blend of a gentle Ginjō aroma and a rich, rice-forward flavour with a subtle spicy note. Meticulously brewed to complement Japanese cuisine, this sake pairs exceptionally well with sushi, vinegared dishes, and dishes prepared with dashi stock.

Kokonoe Saika Brewery in Kinokawa, Wakayama Prefecture, was founded in 1908 by Saika Toyokichi (雜賀豊吉). The brewery manufactures and sells vinegar, vinegar-based products, sake, liqueurs, miscellaneous alcohol, other brewed alcohol, soft drinks, and food products. Across Japan, Wakayama has the highest vinegar consumption per household in Japan. Kokonoe Saika was founded as a brewer of "red vinegar" in a prefecture known as the birthplace of sushi. The brewery has always focused on the vinegar culture of Wakayama and brews sake, which goes well with sushi, vinegared dishes, and other Japanese cuisine.
